A creamy white cheddar queso with our HATCH® diced green chile peppers. The perfect snack or game-time appetizer.
Hatch® Green Chile Queso Blanco
Ingredients
1 can (10 ounce) HATCH® diced tomatoes with green chiles
1 can (4 ounce) HATCH® diced green chiles
½ teaspoon chipotle powder
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
¼ teaspoon cumin
1 teaspoon cornstarch
1 can (12 ounces) evaporated milk
2 lbs (freshly grated) white cheddar cheese (may substitute yellow cheddar cheese)
Instructions
In a medium saucepan over medium-high heat add, HATCH® tomatoes, and green chiles. Bring to a slow boil.
Add spices and cornstarch, and mix well.
Then add the evaporated milk, and continue to mix until combined. Bring to a boil and reduce heat to low.
Add ½ the shredded cheddar cheese. Mix until smooth. Then add the remaining cheddar cheese. Mix until smooth and creamy.
Serve immediately with tortilla chips or your favorite veggies.
