Hatch® Green Chile Chicken Quesadillas
Ingredients
- 4 Flour Tortillas
- 2 cups shredded roast chicken
- 1.5 cups shredded cheese
- 1 (4 ounce) can HATCH® Diced Green Chile – drained
Instructions
- Warm skillet over medium-high heat
- Add flour tortilla
- Sprinkle one cup of roasted chicken over the tortilla
- Sprinkle 3/4 cup shredded cheese over chicken
- Sprinkle 2 ounces of diced green chiles over the cheese
- Add flour tortilla
- Cook for three minutes or until lightly toasted
- Flip and cook the second side for three minutes
- Remove from pan and slice into 8 pieces (like a pizza)
- Serve with guacamole and sour cream!
