HATCH® Breakfast Red Chile Chilaquiles
Ingredients
- 1 pound lean ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tablespoon taco seasoning
- Blue Corn Tortilla Chips
- 1 (15 ounce) can HATCH® Red Chile Enchilada Sauce
- 8 ounces shredded Mexican cheese
- 4 eggs, fried
- Cilantro leaves for garnish
Instructions
- In a large skillet saute over medium-high heat cook the ground beef with the onions, taco seasoning, and garlic.
- Mix well.
- Cook for about 20 minutes, mixing about every five minutes to break up the beef.
- Set cooked beef aside.
- In a small saute pan over medium heat add HATCH® Red Chile Enchilada Sauce and simmer until warm for about 10 minutes
- In a shallow bowl add blue corn tortilla chips, enough to cover the bottom of the dish.
- Layer with 1 cup of cooked ground beef.
- Then add about 1/4 cup of warm enchilada sauce.
- Sprinkle with cheese.
- Microwave for about 30 seconds on high to melt the cheese.
- Add fried egg and garnish with cilantro leaves.
