Green Chile Corn Beef Egg Muffins
Ingredients
- 2 cans ( 4 ounce) HATCH® roasted and diced green chile peppers
- 1 can ( 15 ounce) corn beef hash
- 6 eggs beaten
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese
- Diced avocado for garnish
- Cilantro leaves for garnish
- Chives for garnish
- Cooking spray
Instructions
- Spray the muffin tin with cooking spray.
- Fill the muffin tin about halfway with corn beef hash.
- In a medium-size bowl beat eggs.
- Then add green chiles, salt, and cheddar cheese and mix again.
- Pour egg mixture over corn beef hash.
- Preheat oven to 400 degrees F.
- Bake until egg muffins are fully cooked about 18 – 20 minutes.
- Garnish with avocado, diced chives, and cilantro leaves.
- Serve two per person. Enjoy!
