Creamy Green Chile Chowder
Ingredients
- 3 tablespoons butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 stalks of celery, sliced
- 4 cups vegetable stock
- 1 tablespoon dried parsley
- 1 teaspoon dried thyme
- 2 (4 ounce) cans HATCH® Diced Green Chile Peppers
- 6 medium russet potatoes, washed and diced
- 2 cups frozen sweet corn
- 1 – 2 teaspoons salt (as needed)
- 1 cup heavy cream
- Garnish shredded cheddar cheese and fresh cilantro leaves
Instructions
- In a large stockpot add butter and heat over medium-high heat for about one minute or until the butter melts.
- Add chopped onions, garlic, corn and celery.
- Cook for 3 – 5 minutes or until the onion is translucent in color.
- Add parsley, thyme, diced green chiles, potatoes, and salt. Mix well.
- Add vegetable broth. Bring to a boil and cook for about 35 minutes or until potatoes are tender.
- Add heavy cream and reduce heat to low. Cook another 5 minutes or until heated through.
- Taste and adjust salt if needed.
