Creamy Green Chile Chowder

Ingredients

  • 3 tablespoons butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks of celery, sliced
  • 4 cups vegetable stock
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 2 (4 ounce) cans HATCH® Diced Green Chile Peppers
  • 6 medium russet potatoes, washed and diced
  • 2 cups frozen sweet corn
  • 1 – 2 teaspoons salt (as needed)
  • 1 cup heavy cream
  • Garnish shredded cheddar cheese and fresh cilantro leaves

Instructions

  1. In a large stockpot add butter and heat over medium-high heat for about one minute or until the butter melts.
  2. Add chopped onions, garlic, corn and celery.
  3. Cook for 3 – 5 minutes or until the onion is translucent in color.
  4. Add parsley, thyme, diced green chiles, potatoes, and salt. Mix well.
  5. Add vegetable broth. Bring to a boil and cook for about 35 minutes or until potatoes are tender.
  6. Add heavy cream and reduce heat to low. Cook another 5 minutes or until heated through.
  7. Taste and adjust salt if needed.
